In 1890 the Anzuini Brothers emigrated to Tuscany, in Pistoia, from a small Umbrian town near Norcia, Todiano di Preci (photo 1) to practice their job as butchers in the winter months between October and March. After a few years the Montano brothers, Enrico and Paolo, set up on their own and opened the “shop – laboratory” in which the pork was processed and transformed into cured meats that they themselves sold.
